Chicken Lettuce Wraps

Hello Beautiful Momma,

I can’t resist sharing this recipe with you even though it’s so simple!

This chicken salad takes only a few minutes to toss together and makes the perfect snack.

Sometimes I get so busy with the kids, I forget to eat lunch. I’m so glad I have this in my fridge most days. It helps me fill my appetite with something nutritious instead of processed foods.

It’s so good, it’s addicting. Dairy-Free, Gluten-Free, Whole30 & Paleo compliant.


Chicken Lettuce Wraps 

*2 diced fully-cooked chicken breasts, skinless
1/2 yellow onion, diced
1 diced sweet apple, peel on
1 large halved & diced celery stick
1 large diced avocado
1 generous handful of raw walnut halves & pieces
Equal parts: olive oil & white vinegar, to taste
Salt & pepper to taste
For serving: 1-2 large Living Butter Lettuce heads (use 1-3 leaves per wrap)

Mix the ingredients together. Refrigerate in airtight container. If you have a fresh lime give the avocados a slight squeeze of it, to help from browning. Serve the same day.

Chicken lettuce wraps are so easy and delicious to make!

Next time try adding some of these: red grapes, fresh mango, cilantro, fresh herbs, fresh lime juice, hard boiled egg, cherry tomatoes, etc. It’s hard to mess it up.

*Money saving tip: Use a Costco rotisserie chicken. ($4.99) The remaining carcass & vegetable scraps make a great soup base if you simmer it for several hours.

My kids love these. Even the toddler!
